Do you want to know what my most favorite part of Halloween is? These cookies. I look forward to them every year. What's fun is I have family members who now ask me if I'm still making my monster eye cookies and if they can have a few. That means I accidentally started a family tradition, and I'm totally okay with that.
These cookies are SO tasty and so incredibly easy to whip up. I make them every single year. That's how much I love them. It's not Halloween without these cookies. I originally found this recipe from Lil' Luna's website and it's genius. And I figured just in case any of you are scratching your head on something fun and simple to make as a Halloween treat, here's your perfect solution.
You ready for the recipe? Okay here goes.
Gooey Monster Eye Cookies

1 box yellow cake mix
1/2 cup butter (softened)
1/2 tsp vanilla
1 (8 oz) bar of cream cheese (softened)
Green food coloring
Candy eye balls
Step 1: Beat butter, vanilla, egg and cream cheese until fluffy.
Step 2: Mix in cake mix. Add green food coloring until it's the color you want. Chill for 30 minutes.
Step 3: Roll into balls. Then dip into a bowl of powdered sugar.
Step 4: Bake at 350 degrees for 10-12 minutes. While still warm, gently push candy eyeball into center. Enjoy!
It's seriously that easy. The hardest part is waiting the 30 minutes for the dough to chill in the refrigerator, and if that's the hardest part of a recipe, I can totally handle that. Plus, they are oh so yummy. Perfect texture of crisp on the outside but slightly gooey on the inside. Love it. I may or may not have already at four (or five) today. Too good. Can't resist.

Also, be sure to use a fancy gel food coloring to get the perfect green. I mean maybe you could just use the little dropper type food coloring? I've never tried it so it might work. But I bought this small jar of Wilton Gel Icing Color in Leaf Green, and it has lasted me a long time. A tiny bit goes a really long way. I also bought it from Wal-Mart in the same section where I found the candy eyes. Here's what the bottles look like in case you were wondering.
You guys my sweet grandma surprised me with this adorable Halloween table cloth for my new table and my heart melted. It's too cute. I can't handle it.
